Introduced in November 1999, Absente is an updated version of absinthe, the dazzling, emerald-colored drink –known as the "Green Fairy"– which enjoyed its greatest popularity in late 19th century Paris, and was favored by members of artistic and literary circles. Painters such as Manet, Degas, van Gogh, Toulouse-Lautrec, and Picasso immortalized the absinthe drinker in a special genre of paintings; and poets and writers such as Baudelaire, Wilde, Hemingway and Verlaine gave absinthe credit for their inspiration. By the end of the 19th century, the liqueur was heralded for its role in artistic fulfillment. More than just a drink, absinthe represented a lifestyle—and not one that was well received. In fact, the drink was so potent and effective, it was banned in France and the United States in 1915 because of its fabled hallucinogenic properties.

Last year however, master spirits marketer Michel Roux brought Absente to the American public enabling them to enjoy the anise-flavored liqueur while dreaming of the mystery and reverie of an era long gone. Called "A gorgeous opalescent green drink that’s at once refreshing and sophisticated," Absente has been well received by both critics and the ever-curious public.

Much of the romance behind the legend of absinthe and, more recently, Absente, lies in the preparation ritual. Traditionally, 1½ ounces of the emerald-green liqueur is poured into a glass upon which a slotted spoon is set. A sugar cube is then placed on the spoon and three ounces of cold water is slowly dripped on top, dissolving the sugar, floating through the spoon, and transforming the drink into a milky, opalescent spirit to be savored and enjoyed.
